Potato Kugel Ingredients...
6 Medium Russet Potatoes/4 Large, 1 Onion, 3 Eggs, 1/2 Cup Vegetable Oil, 1/4 Cup All Purpose Flour, Salt, Pepper
To make matzo ball soup, start by heating chicken stock in a large pot. Add chopped onion and sliced celery, then simmer until the vegetables are soft and flavorful. Add seasonings to the pot. While the broth cooks, prepare the matzo balls by combining 1 cup of matzoh meal, 1/4 cup of vegetable oil, and 3 eggs. Shape mixture into 1 inch sized balls. Gently place the matzo balls into the simmering stock and cook until they are light and fully cooked through. Serve the soup hot, making sure each bowl has plenty of broth, celery, onion, and matzo balls.
To make homemade latkes, peel and grate potatoes and an onion, then squeeze out as much liquid as possible. Mix the grated potatoes and onion with eggs, flour, salt, and pepper until well combined. Heat a thin layer of oil in a skillet over medium-high heat, then spoon the mixture into the pan and flatten it into small pancakes. Fry each latke until golden brown and crispy on both sides, then drain on paper towels. Serve warm with sour cream or applesauce.
To make potato kugel, peel and grate potatoes and an onion, then squeeze out as much excess liquid as possible. Mix the grated potatoes and onion with eggs, flour or matzo meal, oil, salt, and pepper until well combined. Pour the mixture into a greased baking dish and spread it evenly. Bake in a preheated oven at 375 until the top is golden brown and the inside is cooked through, about 1 to 1 ½ hours. Let the kugel cool for a few minutes before slicing and serving warm.
